  • If you don’t have any of these ingredients on hand, it’s still possible to make this cake! 
  • You can also add lemon zest or orange zest if desired–just be sure not to overpower the other flavours! 

Vanilla cheesecake recipe 

  1. Place the digestive biscuits in a food processor and process until fine. 
  2. Add melted butter, cream cheese and vanilla extract; process until combined into a smooth paste (you may need to add more melted butter if it’s too dry). 
  3. Transfer mixture into a large mixing bowl, add icing sugar and stir until smooth using an electric whisk or wooden spoon until combined well into one lumpy mass – this can take at least 15 minutes! If you find it too stiff, then add more liquid by adding up to 100ml at once stirring well before repeating again until reaches desired consistency (I usually do this twice then return remaining mixture back into bowl). 
  4. Cover with cling film (so there isn’t any dripping) leaving space on top for rising so that when removed from the fridge cheesecake will expand slightly.
